Problematic Proteins?

Plant proteins called lectins—which are dangerous to eat raw—are making us sick, says a new book called “The Plant Paradox.”
Author Steven Gundry warns against lectins lurking in grains, legumes, nuts, and a variety of fruits and vegetables. Tomatoes, he claims, “incite a chemical warfare in our bodies causing inflammatory reactions that can lead to weight gain and serious health conditions.”
Yet experts say Gundry’s got the wrong culprit.
“I think you’re on stronger epidemiological ground if you say that processed food is associated with ill health in Western cultures,” says nutrition scientist David Jenkins.
